ELLE A CRÉÉ SES GRANOLAS DANS SA CUISINE


Terroir Jennifer Cardle, expatriée installée à Morges, a mis au point une recette 100% naturelle et sans gluten.

Les granolas? Traditionnel dans les pays anglo-saxons, ce mélange de céréales, fruits secs et miel doré au four n’est pas encore très connu en Suisse. Et malgré sa nationalité franco-britannique, Jennifer Cardle l’a vraiment découvert en Afrique du Sud, lorsqu’elle travaillait comme bénévole dans un refuge pour animaux en 2009. A l’époque, elle vit à Paris. En rentrant de voyage, elle déniche le mélange dans un magasin bio. Après son déménagement à Morges pour son travail (elle est cadre chez Medtronics), l’expatriée n’y trouve plus les granolas de ses rêves. Lorsqu’une collègue lui apprend qu’on peut le faire soi-même, elle concocte son mélange idéal dans la petite cuisine de son deux pièces. «Je me suis lancée en assemblant des ingrédients qui me plaisaient dans diverses recettes.» La préparation est d’abord destinée à sa consommation personnelle, puis conquiert rapidement amis et collègues de travail. Les quantités augmentent alors à tel point que Jennifer Cardle emprunte les cuisines de son entreprise une fois par mois pour fabriquer le mélange. «Ensuite j’ai cherché quelqu’un pour produire mes granolas. En travaillant à 100%, je n’arrivais plus à suivre.» Elle collabore avec un industriel de Payerne pendant six mois pour arriver à un produit plus croustillant, sans rajouter de sucre: «J’ai fait de nombreux essais, avec de la châtaigne, du riz soufflé, puis un test avec les corn flakes a convaincu tout le monde.» Avec vient l’idée d’une préparation sans gluten. L’autodidacte abandonne ainsi des céréales comme l’avoine et fait alors produire son mélange chez Sonja Dessert & Santé, dans son laboratoire exclusivement sans gluten à Cully. Bientôt cette dernière n’a plus le temps de s’en occuper, mais met à disposition son infrastructure. «J’allais cuisiner ma préparation là-bas, une fois par mois le week-end. Je devais stocker les sacs de céréales de 20 kg dans mon appartement, les transporter dans les escaliers jusqu’à ma voiture, puis au labo, et je faisais tout, fabrication, emballage, facturation.» Au bout d’un an, Jennifer choisit de confier son granola à l’entreprise Cornu, la maison vaudoise qui fabrique notamment les produits Roland. «C’est aussi une société familiale expérimentée dans le sans gluten. Nous avons travaillé un an ensemble pour optimiser la recette. Je ne voulais pas d’agent conservateur, mais que le mélange garde ses propriétés le plus longtemps possible.» Un nouvel emballage, au design à la fois vintage et très pro, a aussi permis d’augmenter la durée de conservation jusqu’à 4 mois et demi.D’abord produit dans le canton de Vaud, le granola sort aujourd’hui de l’atelier de fabrication de Cornu situé à Arlesheim, à côté de Bâle, car les quantités ont augmenté, jusqu’à représenter à l’heure actuelle plusieurs centaines de kilos par an. Mais tout y est toujours fait à la main. Disponibles dans divers magasins, les granolas de Jenny sont servis depuis l’été dernier dans des 4 et 5 étoiles, comme par exemple au Lausanne Palace.Après avoir passé des week-ends à confectionner ses granolas, Jennifer a monté «un business modèle qui se suffit à lui-même. J’ai trouvé un producteur et un distributeur.» Car elle n’a pas l’intention d’arrêter de travailler à 100%. Et, si elle y a mis tout son argent de poche, les bénéfices n’iront pas dans la sienne, mais à Auxan, l’association pour l’aide à la cause animale qu’elle a créée. Un modèle qui a un prédécesseur illustre dont elle s’est inspirée: «Paul Newman a inventé une vinaigrette dans sa cuisine, puis a commercialisé tout une gamme de produits, dont la vente sert à financer à une association caritative.»

LE GRANOLA, UN MÜESLI TRÉS «CRUNCHY»


Qu’est-ce qui différencie les granolas du birchermüesli et du müesli tout court? Le birchermüesli désigne un mélange typiquement suisse de céréales, lait, yoghourt et fruits. Le müesli est un mélange de céréales faisant la part belle aux flocons de céréales, le plus souvent l’avoine. Le granola est apparenté au müesli, mais il est traditionnellement sucré et doré au four. Ce qui en fait du «müesli croustillant», une mention aussi indiquée sur l’emballage des granolas de Jenny, qui se présentent en deux variantes: l’une aux noix de Pécan et l’autre au chocolat noir, suisse évidemment. Outre les corn flakes de maïs qui apportent le croustillant, on y trouve des graines de courge et de tournesol et de la vanille Bourbon de Madagascar. «C’est la plus chère mais je voulais les meilleurs ingrédients.» Et, pour seul sucre, du miel. Les granolas peuvent être accompagnés de lait, de fromage blanc ou de compote. Ils se mangent pour le petit-déjeuner mais aussi comme en-cas dans la journée. Le facteur santé est très important pour Jennifer Cardle: «Je voulais proposer un produit pour les personnes intolérantes au gluten et qui convient aux enfants. C’est pour cela qu’il n’y a ni sucre ajouté ni conservateurs, ni arômes artificiels.»



SHE CREATED HER GRANOLA IN HER KITCHEN

What is Granola? Although very common in Anglo-Saxon countries, this mixture of cereals, dried fruit and honey all roasted in the oven is not yet well known in Switzerland. In spite of her Franco-British origins, Jennifer Cardle only discovered it in 2009 in South Africa whilst doing volunteer work at an animal shelter. At the time, she was still living in Paris. When she returned from her trip, she found a similar product in a Natural Food shop. After moving to Morges for her job (she is a Manager with Medtronic), the expatriate could no longer find her ideal granola. When she heard from a colleague that you can make it yourself, she devised her dream concoction in the little kitchen of her two-room flat. “I started off by putting together the various tempting ingredients which I picked-up from different recipes”. The resulting mixture originally for her own consumption, soon won over friends and colleagues from work. The quantities increased to such a level that Jennifer Cardle received approval to use the kitchen at her workplace once a month, in order to cook the mixture.“At that point I looked for somebody who could produce my Granola. With a full time job, I couldn’t manage any longer on my own”. She collaborated with a manufacturer in Payerne for six months to develop a more crunchy mixture without adding sugar. “ I tested a number of ingredients including chestnuts, puffed rice, until a test with corn flakes achieved unanimous approval. Simultaneously came the idea of a gluten-free recipe. Consequently, this self-taught creator dropped cereals like oats and started to have her 100% gluten-free mixture produced in the Sonja Dessert & Santé laboratory in Cully. Very quickly due to heavy workload, Sonja was not able to continue production; however she let Jennifer use her facilities. “Once a month, at the weekend, I would go and cook my mixture there. I had to store the 20Kg bags of cereal in my apartment, carry them up and down the stairs to my car, then to the laboratory; I was doing everything from producing to packaging to billing”. After one year, Jennifer decided to hand-over the granola production to Cornu, the Vaudois company who make products for Roland amongst others. “It is also a family-run company specialised in the gluten-free sector. We worked together for a whole year to optimise the recipe. I rejected any addition of preservatives but still wanted the mixture to keep its natural value as long as possible”. A new packaging, presenting both a professional and a traditional look extended the shelf-life to four and a half months.Initially produced in the Vaud Canton, the granola now comes from the Cornu Arlesheim production site, close to Basel, since the quantities have increased and now represent several hundred kilos per year. However it is still fully hand-made. “Les Granolas de Jenny” are available in various shops and since last summer they are also served in 4 and 5 star hotels such as the Lausanne Palace. After having spent her weekends producing her Granola at home, Jennifer has now set-up a “self-sufficient business model. I found a producer and a distributor” Her intention is not to give up her professional career. And even if the money to get to this stage came out of her pocket, the profits will not go back in there, but will instead go to Auxan, an association dedicated to animal protection that she also created. A model with a famous predecessor who inspired her “Paul Newman invented a salad dressing in his kitchen, then marketed a whole range of products, the profits of which are used to finance a charity”.

GRANOLA, A VERY "CRUNCHY "MUESLI


What is the difference between a Bircher Muesli granola and a simple muesli? The Bircher Muesli is a typically Swiss mixture of cereals, milk, yogurt and fruit. Muesli is a mixture of cereals, rich in cereal flakes, usually oat flakes. Granola is similar to muesli but is generally sweetened and roasted in the oven. It justifies the reference to “crunchy muesli” which is also shown on the packaging of “Les Granola de Jenny”. They are available in two varieties, one with pecan nuts and one with black chocolate, Swiss of course. Other than the corn flakes which give the crunchiness, there are pumpkin seeds, sunflower seeds and Madagascar bourbon vanilla. “It is the most expensive vanilla but I wanted only the best ingredients”. The only sugar comes from the honey. Granola can be served with milk, cottage cheese or stewed fruit. It can be eaten at breakfast or as a snack during the day. Jennifer Cardle is very concerned about the health aspects: “I wanted to offer a product for people who are intolerant to gluten as well as being adapted to children. That’s the reason why there is no added sugar, preservatives or artificial flavours”

Granola? Diese aus den angelsächsischen Ländern stammende, im Ofen gebackene Mischung aus Getreideflocken, Trockenfrüchten und Honig ist in der Schweiz noch nicht sehr bekannt. Trotz ihrer französisch-britischen Nationalität hat Jennifer Cardle es zum ersten Mal in Südafrika probiert, während sie dort 2009 als Freiwillige in einem Tierrefugium gearbeitet hat. Damals lebte sie in Paris. Nachdem sie von ihrer Reise zurückgekehrt war, fand sie die Mischung in einem Bioladen. Wegen ihrer Arbeit (als leitende Angestellte bei Medtronic) musste die Auswanderin nach Morges umziehen und konnte dort ihr Lieblingsgranola nicht mehr finden. Als sie von einer Kollegin erfuhr, dass man es auch selbst machen kann, stellt sie in der kleinen Küche ihrer Zwei-Zimmer-Wohnung ihre ideale Mischung zusammen. „Ich habe damit angefangen, indem ich Zutaten, die mir bei verschiedenen Rezepten gefallen haben, miteinander vermischt habe.“ Das Ergebnis war eigentlich nur für ihren persönlichen Konsum gedacht, erfreute sich jedoch bei Freunden und Arbeitskollegen sehr schnell großer Beliebtheit. Die benötigten Mengen wurden so groß, dass Jennifer Cardle einmal pro Monat die Küche ihres Unternehmens benutzte, um die Mischung herzustellen. "Anschließend habe ich jemanden gesucht, der mein Granola für mich herstellen konnte. Mit meinem Vollzeitjob kam ich sonst nicht hinterher.“ Sie arbeitete sechs Monate lang mit dem Hersteller Payerne zusammen, um ein noch knusprigeres Produkt zu erhalten, ohne dabei Zucker hinzuzufügen: „Ich habe zahlreiche Versuche mit Kastanien und Puffreis durchgeführt, bis der Test mit den Cornflakes letztendlich alle überzeugt hat.“ Dabei ist auch die Idee einer Mischung ohne Gluten entstanden. Die Autodidaktin hat Getreidearten wie Hafer von der Zutatenliste gestrichen und ihre Mischung bei Sonjas Dessert & Santé in deren komplett glutenfreiem Labor in Cully herstellen lassen. Bald hatte letztere keine Zeit mehr, sich darum zu kümmern, stellt jedoch weiterhin ihre Infrastruktur zur Verfügung. „Ich habe meine Mischung einmal pro Monat am Wochenende dort zubereitet. Ich musste 20 kg schwere Getreidesäcke in meiner Wohnung aufbewahren, sie über die Treppen in mein Auto und anschließend ins Labor transportieren und mich um alles kümmern: Herstellung, Verpackung, Rechnungen.“


Bei Cornu in Arlesheim wird die Mischung von Hand zubereitet und vermischt. Anschließend wird sie im Ofen gebacken und auf natürliche Weise abgekühlt. Auch die Verpackung ist handgemacht.


Nach einem Jahr entschließt sich Jennifer dazu, ihr Granola der Firma Cornu aus waadtländischem Hause, die vor allem Roland-Produkte herstellt, anzuvertrauen. „Es ist auch ein Familienunternehmen, das Erfahrung mit glutenfreien Produkten hat. Wir haben ein Jahr daran gearbeitet, um das Rezept zu optimieren. Ich wollte keine Konservierungsstoffe hinzufügen, aber die Mischung sollte trotzdem solange wie möglich haltbar bleiben.“ Eine neue Verpackung mit einem Design, das gleichzeitig klassisch und sehr professionell wirkt, hat uns ermöglicht, die Haltbarkeit bis auf viereinhalb Monate zu verlängern. Zunächst im Kanton Waadt hergestellt, kommt das Granola heute aus der Produktionsstätte von Cornu, die sich in Arlesheim in der Nähe von Basel befindet, denn die Mengen sind größer geworden. Aktuell sind es mehrere hundert Kilo pro Jahr. Das Granola von Jenny wird in verschiedenen Geschäften angeboten und seit letztem Sommer sogar in 4 und 5-Stern-Hotels, wie zum Beispiel dem Lausanne Palace serviert. Nachdem sie zahlreiche Wochenenden mit der Herstellung ihres Granolas verbracht hatte, entwickelte Jennifer ein „selbsttragendes Geschäftsmodell“. "Ich habe einen Hersteller und einen Händler gefunden, denn ich habe nicht vor, meine Arbeit 100% aufzugeben". Auch wenn sie ihre gesamten Ersparnisse in das Unternehmen gesteckt hat, kommen die Gewinnen nicht ihr, sondern Auxan, der von ihr gegründeten Tierschutzorganisation, zu Gute. Ein Modell mit einem bekannten Vorgänger, der sie inspiriert hat: „Paul Newman hat in seiner Küche eine Vinaigrette erfunden und eine gesamte Produktpalette vertrieben, um seine karitative Organisation zu finanzieren.“

Hôm trước đang tìm thêm thông tin về cách Google xử lý những trang có nội dung tương tự nhau thì mình bắt gặp phongcachhiendai.net. Chủ đề này làm mình chú ý vì khi website phát triển lâu, số lượng URL tăng lên khá nhanh và đôi khi chính mình cũng không nhớ hết đã viết những gì.
